Mention Pugi’s schiacciata and Florentines are automatically entusiastic! This is a fact and not just advertising waffle. Pugi has been synonymous with schiacciata all’olio, the fragrant local flat bread seasoned with only the finest olive oil, for decades.
The scent of its bread, crispy pizzas and lavishly stuffed focaccias, popular with everyone from students to housewives and office workers, fill the Pugi bakeries at all times of the day.

Their sweet specialities, based on traditional recipes, range from the seasonal frittelle di riso (sweet rice fritters) and pandiramerino (rosemary buns), to their delicious Autumn schiacciata con l’uva (flat bread with grapes). Their latest specialities include various cakes as baked by Grandma: chocolate cakes with pears, ring-shaped cakes with apples, the kind that were popular in Florence in the early 20th century, and the soft Pugi cakes, rather like the Florentine sweet schiacciata, with the addition of strawberries, peaches, crushed almonds and sugar. Unbelievably good!
